Sardinian cuisine reflects a civilization that is both peasant, pastoral and Mediterranean, and constitutes a precious document of the island's material culture. At its center is bread, the food par excellence and its true symbolic pivot. Traditional baking distinguishes ordinary time bread from ceremonial breads, finely shaped and decorated, reserved for parties, weddings and rites of the cycle of life. In these breads — on finely engraved crocodiles, wedding breads, those of the dead — food becomes a gift, ornament and ritual language

Alongside bread, there is a very rich confectionery repertoire, based on almond, honey and sapa: sebadas, pardula, papassinos, amaretti, tiliccas, nougat.

No less varied is the tradition of fresh pasta - culurgiones, malloreddus, fregola, lorighittas, filindeu - which reveals a heritage of shapes and names deeply rooted in individual communities.

The island's food and wine is then based on some pillars of excellence, witnesses of an economy long based on shepherding. The cheese, with Pecorino Sardo and Pecorino Romano PDO, the Fiore Sardo and the famous casu marzu; the Sardegna PDO extra virgin olive oil; and above all the wine, the result of a millenary viticulture that gives Cannonau, Vermentino di Gallura DOCG, Monica, Malvasia and Vernaccia di Oristano

. The

result is a culture of food in which every product is nourishment, artisan knowledge and a sign of identity: a language through which Sardinia tells its story and continues to recognize itself. The festive table also includes roasts - on porceddu, lamb, goat - cooked on a spit according to an ancient pastoral art, and carasau bread, thin and crunchy, created to accompany shepherds' long journeys. Rooted in the territory and in the seasons, this cuisine remains one of the most eloquent languages through which the island preserves its memory, tells itself and

welcomes those who visit it.
