It is located in the late seventeenth-century villa of the Boyl family, who built an oil mill there. In the early 1900s, the notary Francesco Locci bought the building, starting the production of oil on his own and the milling business for third parties. The museum is dedicated to the olive oil tradition, deeply rooted in the territory of Parteolla. The exhibition illustrates the entire oil cycle: olive growing (tools for cultivation and pruning; graduated containers for measuring olives to start milling: “[span lang="sro"] su moi [/span]”, “[span lang="sro"] sa mesuredda [/span]”, “[span lang="sro"] sa mesura [/span]”, “[span lang="sro"] sa quarra [/span]”), to olive pressing (animal-traction mill), extraction of oil must (press for pressing fiscoli), separation of oil from water, preservation of oil (from Roman amphora to the most modern galvanized sheet containers). A section is dedicated to documentation on the production of oil and preserves the records of the Oleificio Locci. An underground tank displays about seventy oil lamps of various origins and ages, used for lighting and religious purposes: Canaanite, Hellenistic, Roman, Sabbatical, Islamic, Sardinian, “Florentine”. The collection of graduated containers, used instead of the scale for measuring olives to be started for milling, the first olive pressing system unchanged for millennia, is considerable.
